A soft brine cheese that has long been made in many Eastern European and Caucasian countries. It has a light sour-milk flavour and a fairly dense, brittle consistency.
Brynza is added to different dishes like soups, baked vegetables and meat, salads. It is used as stuffing for pies and stuffed dishes.
It is ideal for sandwiches and canapes because its salty and sour taste excellently sets off the other ingredients.
