Brine cheese is made from normalized pasteurized cow's milk, subjected to ultrafiltration and followed by the addition of bacterial starter culture, milk-clotting enzyme and salting. Thanks to its saltiness, the cheese complements fresh herbs such as rosemary, oregano and mint. Cheese "Brynza" can be served with fish, meat and seafood, and can be used to prepare pie fillings. It can also be served with sweet grapes, wine and scented bread.
