Acacia honey is the lightest of all varieties in existence. Immediately after collection, it has a liquid consistency, in which it can remain for a year. From white acacia (robinia) - almost transparent, from yellow - the color of light amber. The aroma is delicate, slightly perceptible, slightly sour, characteristic of acacia.
Taste qualities. The taste is pleasant, enveloping, light, with a hint of vanilla and flower nectar with a long aftertaste. Pure acacia honey has no bitterness.
Crystallization. Honey from white acacia, during crystallization, becomes snow-white, granular, from yellow - from light yellow with a greenish tint it turns into white-yellow, also having a granular structure.
