A pork cutlet is a thin, boneless cut of meat that is taken from the loin or leg section of a pig. The further the cut is from the center of the pig, the bonier and fattier the meat becomes. Pork cutlets are taken from the very center of the animal, known as the tenderloin section.
The tenderloin, also known as pork fillet is boneless and lean and the most tender cut of pork when cooked correctly. Because it is so lean, it can be cooked quickly for ease and convenience.
